Festival TREK is the largest traveling food truck festival in the Netherlands . It transforms the Maastricht Stadspark into a giant open-air restaurant for four days. What is a food Truck during the Festival TREK Maastricht Stadspark ?
A food truck is essentially a mobile restaurant that operates out of a converted van or trailer . The interior of the food truck is mostly with everything a restaurant kitchen needs to prepare and cook food, including grills, griddles, fryers, ranges, microwaves, and prep and storage space. Customers typically order their food from a window on the side of the truck, and then the food is cooked to order and served right there.
Because of the limited space they have to work with, food truck menus are usually shorter than what you might find at a traditional restaurant. However, what they lack in quantity, they make up for in creativity. Food trucks are famous for offering unique and interesting dishes that you won’t find anywhere else. Many food trucks specialize in a particular cuisine, like tacos, barbecue, or gourmet burgers. There are also food trucks that offer vegetarian, vegan, and other specialty options. and of course you will find during TREK Maastricht stands with local beers and even cheese form Maastricht!
Where does the concept of Food Truck originate?
While the exact origin is debatable, the concept of food trucks can be traced back in a few ways:
- Horse-drawn wagons: In the 19th century, vendors in the United States used horse-drawn wagons, like chuckwagons, to sell food to cowboys, loggers, and construction workers in remote areas. These early food trucks provided sustenance to those on the go.
- Street vendors: Throughout history, street vendors have existed in many cultures, selling food from carts or stalls. They are considered precursors to modern food trucks, although they may not have had motorized vehicles.
- University catering: In the late 19th and early 20th centuries, wagons selling sausages became popular near universities like Harvard and Yale, catering to students. This shows an early example of mobile food service adapting to a specific customer base.
So, while there isn’t a single pinpoint origin, the food truck concept likely evolved from a combination of these mobile food vending traditions.

This year it’s a party, as the Festival TREK has been around for 11 YEARS! You can enjoy lots of delicious food, cold drinks, theater, live music, nostalgic fairground attractions and much more!
